Cheesy Bacon Pota…
Ingredients
  • 4 large potatoes
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chives, chopped

Steps
  1. Preheat oven to 400°F.
  2. Scrub potatoes and pierce with a fork several times.
  3. Bake for 45 minutes, or until tender.
  4. Cut potatoes in half lengthwise and scoop out centers, leaving 1/4 inch of potato in the skin.
  5. Mix cheese and bacon together in a bowl.
  6. Fill each potato skin with cheese and bacon mixture.
  7. Bake for 10-15 minutes or until cheese is melted and bubbly.
  8. Top with sour cream, chives and additional bacon if desired.
