- 4 large potatoes
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/4 cup sour cream
- 2 tablespoons chives, chopped
- Preheat oven to 400°F.
- Scrub potatoes and pierce with a fork several times.
- Bake for 45 minutes, or until tender.
- Cut potatoes in half lengthwise and scoop out centers, leaving 1/4 inch of potato in the skin.
- Mix cheese and bacon together in a bowl.
- Fill each potato skin with cheese and bacon mixture.
- Bake for 10-15 minutes or until cheese is melted and bubbly.
- Top with sour cream, chives and additional bacon if desired.
