Ingredients
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon butter, melted
  • 6 ounces cheddar cheese, cut into small cubes

Steps
  1. In a large bowl, combine the warm water, sugar and yeast. Let stand for 5 minutes until foamy.
  2. Add the flour, salt and butter to the yeast mixture and stir with a spoon until a dough forms.
  3. Knead the dough on a lightly floured surface for 5 minutes until it is smooth and elastic.
  4. Divide the dough into 12 equal pieces and roll each piece into a ball.
  5. Flatten each ball of dough and place one cube of cheese in the center. Gently wrap the dough around the cheese cube and pinch to seal.
  6. Bring 8 cups of water to a boil in a large pot. Add 1/4 cup of baking soda to the boiling water and stir to combine.
  7. Drop 3-4 pretzel bites at a time into the boiling water. Boil for 30 seconds then remove from the pot with a slotted spoon.
  8. Place pretzel bites on parchment lined baking sheets. Brush each pretzel bite with melted butter and sprinkle with coarse salt.
  9. Bake at 425°F for 12-15 minutes or until golden brown.
  10. Serve warm.
