- 2 flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or a combination)
- Cooking spray
- Optional toppings: salsa, sour cream, diced tomatoes, chopped cilantro
- Heat a large skillet over medium heat. Spray with cooking spray.
- Place one tortilla in the skillet. Sprinkle with half of the cheese.
- Top with the other tortilla and press down lightly.
- Cook for 2 minutes until cheese is melted and bottom tortilla is lightly browned.
- Flip quesadilla over and cook for another 2 minutes until lightly browned.
- Remove from skillet and cut into wedges.
- Repeat with remaining ingredients.
- Serve warm with desired toppings.
