Cheese Quesadillas
Ingredients
  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a combination)
  • Cooking spray
  • Optional toppings: salsa, sour cream, diced tomatoes, chopped cilantro

Steps
  1. Heat a large skillet over medium heat. Spray with cooking spray.
  2. Place one tortilla in the skillet. Sprinkle with half of the cheese.
  3. Top with the other tortilla and press down lightly.
  4. Cook for 2 minutes until cheese is melted and bottom tortilla is lightly browned.
  5. Flip quesadilla over and cook for another 2 minutes until lightly browned.
  6. Remove from skillet and cut into wedges.
  7. Repeat with remaining ingredients.
  8. Serve warm with desired toppings.
