- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 2 tablespoons butter, melted and cooled slightly
- 1 cup buttermilk
- 1 large egg, lightly beaten
- 3/4 cup shredded cheddar cheese
- 3 tablespoons jalapeno peppers, diced
- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8 inch square baking pan.
- In a medium bowl, combine the cornmeal, flour, baking powder, baking soda, salt and sugar. Stir in the butter and buttermilk until well combined.
- Stir in the egg and mix just until combined. Fold in the cheese and jalapenos.
- Spread batter evenly into prepared pan.
- Bake for 25 minutes or until golden brown.
