Ingredients
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 tablespoons butter, melted and cooled slightly
  • 1 cup buttermilk
  • 1 large egg, lightly beaten
  • 3/4 cup shredded cheddar cheese
  • 3 tablespoons jalapeno peppers, diced

Steps
  1. Preheat the oven to 375 degrees F (190 degrees C). Grease an 8 inch square baking pan.
  2. In a medium bowl, combine the cornmeal, flour, baking powder, baking soda, salt and sugar. Stir in the butter and buttermilk until well combined.
  3. Stir in the egg and mix just until combined. Fold in the cheese and jalapenos.
  4. Spread batter evenly into prepared pan.
  5. Bake for 25 minutes or until golden brown.
