Cheddar Cornbread
Ingredients
  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 cup yellow cornmeal
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Grease an 8 inch square baking pan.
  3. In a medium bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the sour cream.
  5. Combine the cornmeal, flour, baking powder and salt; stir into the creamed mixture.
  6. Mix in the cheese.
  7. Spread evenly into the prepared pan.
  8. Bake for 25 to 30 minutes in preheated oven, or until a toothpick inserted into center of the bread comes out clean.
