Cheddar Cornbread…
Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 2 large eggs, lightly beaten
  • 2 tablespoons butter, melted and cooled slightly
  • 1 1/2 cups shredded cheddar cheese

Steps
  1. Preheat oven to 375°F. Grease 12 standard muffin cups.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In a medium bowl, whisk together milk, eggs and butter.
  4. Add wet ingredients to dry ingredients and stir until just combined. Fold in cheddar cheese.
  5. Divide batter evenly among muffin cups. Bake for 18-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
