- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup milk
- 2 large eggs, lightly beaten
- 2 tablespoons butter, melted and cooled slightly
- 1 1/2 cups shredded cheddar cheese
- Preheat oven to 375°F. Grease 12 standard muffin cups.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a medium bowl, whisk together milk, eggs and butter.
- Add wet ingredients to dry ingredients and stir until just combined. Fold in cheddar cheese.
- Divide batter evenly among muffin cups. Bake for 18-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
