- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup cold butter, cut into small cubes
- 3/4 cup buttermilk, plus 2 tablespoons for brushing the scones
- 1 cup shredded cheddar cheese
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- Using a pastry blender or two knives, cut in the butter until mixture resembles coarse crumbs.
- Stir in the buttermilk and cheese until just combined.
- Turn dough out onto a lightly floured surface and knead gently about 5 times.
- Shape dough into an 8-inch circle about 1 inch thick. Cut into 8 wedges and place on prepared baking sheet.
- Brush each wedge with remaining 2 tablespoons of buttermilk.
- Bake for 14 to 16 minutes or until golden brown. Serve warm.
