Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup cold butter, cut into small cubes
  • 3/4 cup buttermilk, plus 2 tablespoons for brushing the scones
  • 1 cup shredded cheddar cheese

Steps
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda and salt.
  3. Using a pastry blender or two knives, cut in the butter until mixture resembles coarse crumbs.
  4. Stir in the buttermilk and cheese until just combined.
  5. Turn dough out onto a lightly floured surface and knead gently about 5 times.
  6. Shape dough into an 8-inch circle about 1 inch thick. Cut into 8 wedges and place on prepared baking sheet.
  7. Brush each wedge with remaining 2 tablespoons of buttermilk.
  8. Bake for 14 to 16 minutes or until golden brown. Serve warm.
