- 2 cups cooked brown rice
- 2 cups broccoli florets
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons butter, melted
- 1 cup shredded cheddar cheese
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- In a large bowl, combine the cooked rice, broccoli, onion, bell pepper, garlic powder and black pepper. Pour melted butter over the top and mix well.
- Spread the mixture into the prepared baking dish. Sprinkle with cheddar cheese.
- Bake in preheated oven for 25 minutes or until cheese is melted and bubbly.
