- 1/2 cup diced celery
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1 tablespoon olive oil
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
- In a medium bowl, mix together the celery, onion and red bell pepper.
- Add the olive oil, white wine vinegar and salt and pepper to taste.
- Stir to combine.
- Refrigerate for at least 1 hour before serving.
