Cauliflower Fried…
Ingredients
  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 3 tablespoons low-sodium soy sauce or tamari
  • 2 teaspoons sesame oil

Steps
  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes.
  3. Add the cauliflower rice and peas and carrots. Cook for 5 minutes.
  4. Stir in the soy sauce or tamari and sesame oil. Cook for another 3 minutes or until everything is heated through.
  5. Serve warm.
