- 1 head cauliflower
- 2 tablespoons olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 tablespoons low-sodium soy sauce or tamari
- 2 teaspoons sesame oil
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes.
- Add the cauliflower rice and peas and carrots. Cook for 5 minutes.
- Stir in the soy sauce or tamari and sesame oil. Cook for another 3 minutes or until everything is heated through.
- Serve warm.
