Cauliflower Chees…
Ingredients
  • 1 head of cauliflower, cut into florets
  • 4 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup heavy cream or half-and-half
  • 2 cups shredded cheese

Steps
  1. In a large saucepan, melt butter over medium heat. Add onion and garlic and cook until softened.
  2. Add cauliflower, chicken broth, thyme, salt and pepper. Bring to a boil. Reduce heat to low and simmer for 20 minutes.
  3. Stir in cream or half-and-half and cheese. Simmer for an additional 10 minutes or until cheese is melted.
  4. Puree soup in batches in a blender or use an immersion blender to blend soup directly in the pot.
  5. Serve hot with your favorite toppings.
