In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the sugar, oil, eggs and vanilla until combined.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the grated carrots.
Divide batter evenly among 12 muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely before serving.
