- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup vegetable oil
- 2 cups granulated sugar
- 4 large eggs, lightly beaten
- 2 teaspoons pure vanilla extract
- 3 cups finely grated carrots (about 4-5 large carrots)
- 1 cup chopped walnuts, plus extra for topping
- Preheat oven to 350°F. Grease a 9x13 inch baking pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon.
- In a separate bowl, mix together the oil and sugar. Add the eggs and vanilla extract and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the grated carrots and walnuts until evenly distributed.
- Pour batter into prepared pan. Sprinkle additional walnuts on top if desired.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing into bars.
