Carrot Cake Bars
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs, lightly beaten
  • 2 teaspoons pure vanilla extract
  • 3 cups finely grated carrots (about 4-5 large carrots)
  • 1 cup chopped walnuts, plus extra for topping

Steps
  1. Preheat oven to 350°F. Grease a 9x13 inch baking pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon.
  3. In a separate bowl, mix together the oil and sugar. Add the eggs and vanilla extract and mix until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Stir in the grated carrots and walnuts until evenly distributed.
  6. Pour batter into prepared pan. Sprinkle additional walnuts on top if desired.
  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing into bars.
