Caramelized Onion…
Ingredients
  • 1 9-inch pre-baked pie crust
  • 3 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon sugar
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1 cup half-and-half or light cream
  • 1/2 cup grated Gruyere cheese

Steps
  1. Preheat oven to 375 degrees F.
  2. In a large skillet, heat the oil over medium heat.
  3. Add the onions, salt, pepper and sugar. Cook for about 15 minutes, stirring often until the onions are golden brown.
  4. Stir in the garlic and cook for 1 minute longer.
  5. Spread the onion mixture evenly in the prebaked pie crust.
  6. In a medium bowl whisk together the eggs and cream until blended.
  7. Pour over the onion mixture in the pie crust.
  8. Sprinkle with Gruyere cheese.
  9. Bake for 30 to 35 minutes or until a knife inserted near center comes out clean. Let stand 10 minutes before cutting
