- 1 9-inch pre-baked pie crust
- 3 tablespoons olive oil
- 2 large onions, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon sugar
- 2 cloves garlic, minced
- 3 large eggs
- 1 cup half-and-half or light cream
- 1/2 cup grated Gruyere cheese
- Preheat oven to 375 degrees F.
- In a large skillet, heat the oil over medium heat.
- Add the onions, salt, pepper and sugar. Cook for about 15 minutes, stirring often until the onions are golden brown.
- Stir in the garlic and cook for 1 minute longer.
- Spread the onion mixture evenly in the prebaked pie crust.
- In a medium bowl whisk together the eggs and cream until blended.
- Pour over the onion mixture in the pie crust.
- Sprinkle with Gruyere cheese.
- Bake for 30 to 35 minutes or until a knife inserted near center comes out clean. Let stand 10 minutes before cutting
