Caramel Corn
Ingredients
  • 1/2 cup butter
  • 1/2 cup light corn syrup
  • 2 cups packed brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 6 quarts popped popcorn

Steps
  1. Preheat oven to 250 degrees F (120 degrees C). Grease one very large roasting pan.
  2. Melt butter in a saucepan. Stir in corn syrup, brown sugar and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes.
  3. Remove from heat and stir in baking soda. Mixture will be light and foamy.
  4. Pour mixture over popcorn in the roasting pan and stir until all of the popcorn is evenly coated.
  5. Bake at 250 degrees F (120 degrees C) for 1 hour, stirring every 15 minutes.
  6. Remove from oven and pour onto waxed paper or aluminum foil to cool.
  7. Break apart when cool.
