Caramel Corn Bars
Ingredients
  • 1/2 cup butter, melted
  • 1 (10.5 ounce) package mini marshmallows
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 6 cups popped popcorn, divided

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9x13 inch baking dish.
  3. In a large bowl, combine the melted butter, marshmallows, corn syrup and vanilla extract.
  4. Stir in 4 cups of the popcorn until evenly coated.
  5. Press into the prepared baking dish.
  6. Bake for 10 minutes in the preheated oven.
  7. Remove from oven and sprinkle with remaining 2 cups popcorn.
  8. Return to oven and bake for an additional 5 minutes or until golden brown.
