Brownie Cupcakes
Ingredients
  • 1 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable oil

Steps
  1. Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder and salt.
  3. In a separate bowl, whisk together the eggs, sugar and vanilla until light and fluffy.
  4. Add the oil and continue to whisk until combined.
  5. Add the wet ingredients to the dry ingredients and whisk until just combined.
  6. Divide batter among muffin cups and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cupcakes to cool in pan for 10 minutes before transferring them to a wire rack to cool completely.
