Ingredients
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 2 cups diced potatoes
  • 2 cups diced carrots
  • 2 cups fresh broccoli florets
  • 1 teaspoon dried basil leaves
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Steps
  1. Melt butter in a large saucepan over medium heat. Add onion, and cook until tender.
  2. Stir in flour until blended. Gradually stir in chicken broth and milk.
  3. Add potatoes, carrots, broccoli, basil, salt and pepper. Bring to a boil.
  4. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender.
  5. Puree soup in batches in a blender or food processor; return to pan.
  6. Cook over low heat until heated through (do not boil). Serve hot.
