Boston Baked Beans
Ingredients
  • 1 lb dried navy beans
  • 1/4 cup molasses
  • 1/4 cup brown sugar
  • 2 tablespoons dry mustard
  • 1 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon ground ginger
  • 2 tablespoons butter or margarine

Steps
  1. Soak beans overnight in cold water.
  2. Drain and rinse beans. Place in a large pot and cover with fresh cold water.
  3. Bring to a boil, reduce heat and simmer for 1 hour.
  4. Drain beans, reserving 2 cups of liquid.
  5. Preheat oven to 325°F (165°C).
  6. Combine molasses, brown sugar, mustard, salt, pepper and ginger in a small bowl.
  7. Melt butter or margarine in a large baking dish. Add drained beans and reserved liquid.
  8. Stir in molasses mixture and mix well to coat the beans.
  9. Bake uncovered for 1 1/2 hours or until desired thickness of sauce is reached. Stir occasionally during baking time.
  10. Serve hot.
