- 1 lb dried navy beans
- 1/4 cup molasses
- 1/4 cup brown sugar
- 2 tablespoons dry mustard
- 1 teaspoon salt
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon ground ginger
- 2 tablespoons butter or margarine
- Soak beans overnight in cold water.
- Drain and rinse beans. Place in a large pot and cover with fresh cold water.
- Bring to a boil, reduce heat and simmer for 1 hour.
- Drain beans, reserving 2 cups of liquid.
- Preheat oven to 325°F (165°C).
- Combine molasses, brown sugar, mustard, salt, pepper and ginger in a small bowl.
- Melt butter or margarine in a large baking dish. Add drained beans and reserved liquid.
- Stir in molasses mixture and mix well to coat the beans.
- Bake uncovered for 1 1/2 hours or until desired thickness of sauce is reached. Stir occasionally during baking time.
- Serve hot.
