Blueberry Waffles
Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk
  • 1/4 cup melted butter
  • 2 eggs, beaten
  • 1 cup fresh blueberries

Steps
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  2. In a separate bowl, whisk together the buttermilk, butter and eggs.
  3. Stir the wet ingredients into the dry ingredients until just combined.
  4. Gently fold in the blueberries.
  5. Heat a waffle iron and spray with nonstick cooking spray.
  6. Scoop about 1/3 cup of batter onto the preheated waffle iron. Close lid of iron and cook for 3-4 minutes or until golden brown.
  7. Serve with butter and syrup.
