Blueberry Tart
Ingredients
  • 1/2 cup butter, melted
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch tart pan.
  2. In a medium bowl, stir together the melted butter and sugar. Beat in egg and vanilla extract.
  3. Combine the flour, baking powder, and salt. Gradually add to the wet mixture until blended.
  4. Spread batter into prepared pan and bake for 20 minutes or until lightly browned.
  5. Remove from oven and let cool for 10 minutes before adding blueberry filling.
  6. For the blueberry filling: In a small bowl, mix together 1 cup of blueberries with 2 tablespoons of white sugar. Spread over cooled tart crust.
  7. Bake for an additional 20 minutes or until golden brown.
