- 1/2 cup butter, melted
- 3/4 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch tart pan.
- In a medium bowl, stir together the melted butter and sugar. Beat in egg and vanilla extract.
- Combine the flour, baking powder, and salt. Gradually add to the wet mixture until blended.
- Spread batter into prepared pan and bake for 20 minutes or until lightly browned.
- Remove from oven and let cool for 10 minutes before adding blueberry filling.
- For the blueberry filling: In a small bowl, mix together 1 cup of blueberries with 2 tablespoons of white sugar. Spread over cooled tart crust.
- Bake for an additional 20 minutes or until golden brown.
