Ingredients
  • 2 cups all-purpose flour
  • 1/3 cup white sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 1/2 cup frozen blueberries
  • 3 tablespoons lemon juice
  • 1/2 cup heavy cream

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, whisk together the flour, sugar, baking powder and salt.
  3. Cut in the butter until mixture resembles coarse crumbs.
  4. Stir in blueberries and lemon juice.
  5. Stir in cream until dough comes together.
  6. Turn out onto a lightly floured surface and knead gently 4 or 5 times.
  7. Pat into a 3/4 inch thick round.
  8. Cut into 8 wedges and place on an ungreased baking sheet.
  9. Bake for 15 to 20 minutes or until golden brown.
