- 1 lb. black beans
- 4 cups water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- Soak beans overnight in a large bowl of water.
- Drain and rinse beans.
- In a large pot, add beans, water, onion, garlic and jalapeno pepper.
- Bring to a boil over high heat.
- Reduce heat to low and simmer for 1 hour or until beans are tender.
- Remove from heat and serve.
