- 1/2 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/4 cup cooked corn
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 3 tablespoons diced jalapeño pepper (optional)
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons olive oil
- In a medium bowl, combine the quinoa, black beans, corn, onion, bell pepper, jalapeño (if using), garlic, cilantro and olive oil.
- Mix until well combined.
- Form into 4-6 patties.
- Heat a large skillet over medium heat and cook the burgers for 3-4 minutes per side or until golden brown and crispy.
- Serve on buns or lettuce wraps with desired toppings.
