Black Bean Quinoa…
Ingredients
  • 1/2 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/4 cup cooked corn
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 3 tablespoons diced jalapeño pepper (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons olive oil

Steps
  1. In a medium bowl, combine the quinoa, black beans, corn, onion, bell pepper, jalapeño (if using), garlic, cilantro and olive oil.
  2. Mix until well combined.
  3. Form into 4-6 patties.
  4. Heat a large skillet over medium heat and cook the burgers for 3-4 minutes per side or until golden brown and crispy.
  5. Serve on buns or lettuce wraps with desired toppings.
