Black Bean Burgers
Ingredients
  • 1/2 cup cooked brown rice
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/4 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1 egg, lightly beaten
  • 2 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon chili powder

Steps
  1. In a large bowl, mash black beans with a fork.
  2. Add the cooked brown rice, onion, bell pepper, egg, ketchup, Worcestershire sauce, cilantro and chili powder and mix well.
  3. Form the mixture into four patties.
  4. Heat a large non-stick skillet over medium heat and cook the patties for 5 minutes on each side or until golden brown.
  5. Serve on buns with desired toppings.
