- 1 pound shrimp, peeled and deveined
- 1 cup beer
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Vegetable oil for frying
- In a medium bowl, combine the beer, flour, garlic powder, onion powder, Cajun seasoning, salt and pepper.
- Heat oil in a large skillet over medium heat.
- Dip the shrimp into the batter one at a time and place into the hot oil.
- Fry for about 2 minutes per side or until golden brown.
- Remove from the oil and drain on paper towels.
- To assemble the po' boys: Place 4-5 fried shrimp onto each bun. Top with lettuce, tomatoes, pickles and tartar sauce if desired.
