Beef Wellington
Ingredients
  • 2 tablespoons olive oil
  • 2 pounds beef tenderloin, trimmed and cut into 4 equal pieces
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup Dijon mustard
  • 1 (17.3-ounce) package frozen puff pastry, thawed
  • 1 large egg, beaten

Steps
  1. Preheat oven to 400 degrees F.
  2. Heat olive oil in a large skillet over medium high heat.
  3. Season beef with salt and pepper, to taste.
  4. Add beef to the skillet and cook until evenly browned, about 2-3 minutes per side.
  5. Spread mustard over the beef.
  6. On a lightly floured surface, roll out puff pastry into 4 rectangles.
  7. Place beef on top of puff pastry rectangles.
  8. Brush edges with beaten egg.
  9. Fold the sides of the puff pastry over the beef, pressing down lightly to seal.
  10. Place onto a baking sheet lined with parchment paper.
  11. Brush tops with remaining beaten egg.
  12. Bake in preheated oven until golden brown and puffed up, about 20-25 minutes.
