Beef Stew
Ingredients
  • 2 lbs beef stew meat
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 cups beef broth
  • 3 potatoes, peeled and cubed
  • 3 carrots, peeled and sliced

Steps
  1. Heat the olive oil in a large pot over medium-high heat. Add the beef stew meat and cook until browned on all sides.
  2. Add the onion, garlic, oregano, thyme and bay leaves. Cook for 5 minutes.
  3. Add the beef broth and bring to a boil. Reduce heat to low and simmer for 1 hour.
  4. Add the potatoes and carrots. Simmer for an additional 30 minutes or until vegetables are tender.
  5. Remove bay leaves before serving.
