- 2 lbs beef stew meat
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- 4 cups beef broth
- 3 potatoes, peeled and cubed
- 3 carrots, peeled and sliced
- Heat the olive oil in a large pot over medium-high heat. Add the beef stew meat and cook until browned on all sides.
- Add the onion, garlic, oregano, thyme and bay leaves. Cook for 5 minutes.
- Add the beef broth and bring to a boil. Reduce heat to low and simmer for 1 hour.
- Add the potatoes and carrots. Simmer for an additional 30 minutes or until vegetables are tender.
- Remove bay leaves before serving.
