Ingredients
  • 1 tablespoon olive oil
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 3 cups beef broth
  • 2 cups dry red wine
  • 3 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced

Steps
  1. Heat the oil in a large pot over medium heat.
  2. Add the beef cubes and cook until browned on all sides.
  3. Add the onion and garlic; cook until softened.
  4. Stir in the flour, thyme and pepper; cook for 1 minute.
  5. Stir in the beef broth and wine; bring to a boil.
  6. Reduce heat to low; cover and simmer for 1 hour.
  7. Add the potatoes and carrots; cover and simmer for 30 minutes longer or until the vegetables are tender.
  8. Serve warm.
