Ingredients
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 12 corn tortillas

Steps
  1. Preheat oven to 350°F.
  2. In a large skillet over medium heat, cook beef, garlic and onion until beef is browned and onion is soft.
  3. Stir in enchilada sauce, chiles, chili powder and cumin. Simmer for 5 minutes.
  4. Season with salt and pepper to taste.
  5. Spread 1/4 cup of the mixture in the bottom of a 9x13 inch baking dish.
  6. Wrap tortillas in damp paper towels and microwave for 30 seconds to soften.
  7. Spoon about 1/3 cup of the beef mixture onto each tortilla. Roll up and place seam side down in baking dish.
  8. Pour remaining sauce over enchiladas. Cover with foil and bake for 25 minutes.
  9. Uncover and bake 10 more minutes.
