- 1 lb ground beef
- 2 cloves garlic, minced
- 1 onion, diced
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chiles
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 12 corn tortillas
- Preheat oven to 350°F.
- In a large skillet over medium heat, cook beef, garlic and onion until beef is browned and onion is soft.
- Stir in enchilada sauce, chiles, chili powder and cumin. Simmer for 5 minutes.
- Season with salt and pepper to taste.
- Spread 1/4 cup of the mixture in the bottom of a 9x13 inch baking dish.
- Wrap tortillas in damp paper towels and microwave for 30 seconds to soften.
- Spoon about 1/3 cup of the beef mixture onto each tortilla. Roll up and place seam side down in baking dish.
- Pour remaining sauce over enchiladas. Cover with foil and bake for 25 minutes.
- Uncover and bake 10 more minutes.
