Ingredients
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 (10-ounce) cans enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 12 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese

Steps
  1. Preheat oven to 375 degrees F.
  2. In a large skillet over medium heat, cook the ground beef with the onion and garlic until the beef is browned.
  3. Stir in the enchilada sauce and green chiles.
  4. In a 9x13 inch baking dish, layer half of the tortilla strips on the bottom.
  5. Pour half of the beef mixture over the tortillas.
  6. Sprinkle with half of the cheese.
  7. Repeat layering with remaining ingredients and top with cheese.
  8. Bake for 25 minutes or until bubbly and cheese is melted.
