- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 (10-ounce) cans enchilada sauce
- 1 (4-ounce) can diced green chiles
- 12 corn tortillas, cut into strips
- 2 cups shredded cheddar cheese
- Preheat oven to 375 degrees F.
- In a large skillet over medium heat, cook the ground beef with the onion and garlic until the beef is browned.
- Stir in the enchilada sauce and green chiles.
- In a 9x13 inch baking dish, layer half of the tortilla strips on the bottom.
- Pour half of the beef mixture over the tortillas.
- Sprinkle with half of the cheese.
- Repeat layering with remaining ingredients and top with cheese.
- Bake for 25 minutes or until bubbly and cheese is melted.
