- 1 lb ground beef
- 1 package taco seasoning
- 2 cups cooked rice
- 2 cups shredded cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced jalapeno pepper
- 8 large flour tortillas
- In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain off any fat.
- Add the taco seasoning and stir to combine.
- Add the cooked rice, shredded cheese, onion, bell pepper and jalapeno pepper. Stir to combine.
- Warm the tortillas in a dry skillet over medium heat until soft and pliable.
- Spoon 1/8 of the beef mixture into each tortilla and roll up. Serve immediately.
