- 1 lb beef stew meat
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 potatoes, peeled and cubed
- 3 carrots, peeled and sliced
- 2 cups beef broth
- Heat oil in a large pot over medium heat. Add garlic, onion and stew meat. Cook until meat is browned on all sides.
- Add oregano, basil, salt and pepper to the pot. Stir in potatoes, carrots and broth.
- Bring mixture to a boil then reduce heat to low. Simmer for 1 hour or until vegetables are tender.
- Serve hot.
