Ingredients
  • 1 lb. dried beans
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 6 cups vegetable broth
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste

Steps
  1. Soak the beans in a large bowl of cold water overnight.
  2. In a large soup pot, heat the olive oil over medium heat.
  3. Add the garlic and onions and cook until softened.
  4. Add the soaked beans, vegetable broth and thyme leaves.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot.
