Banana Waffles
Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, lightly beaten
  • 2 cups buttermilk
  • 4 tablespoons melted butter, cooled slightly
  • 1/4 cup sugar
  • 1 ripe banana, mashed

Steps
  1. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  2. In a separate bowl, whisk together the eggs, buttermilk and melted butter.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Stir in the sugar and mashed banana.
  5. Heat a waffle iron according to manufacturer's instructions and cook waffles until golden brown.
  6. Serve hot with desired toppings.
