Banana Pudding
Ingredients
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups milk
  • 2 eggs, beaten
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced

Steps
  1. In a medium saucepan, combine sugar, cornstarch and salt. Gradually stir in milk until smooth.
  2. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil for 1 minute.
  3. Remove from heat and gradually stir about one fourth of the hot mixture into beaten eggs.
  4. Return egg mixture to remaining hot mixture in saucepan. Cook over low heat 2 minutes, stirring constantly.
  5. Remove from heat and stir in butter, vanilla and bananas.
  6. Pour into serving dishes.
  7. Serve warm or chilled.
