- 2/3 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 cups milk
- 2 eggs, beaten
- 2 tablespoons butter or margarine
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- In a medium saucepan, combine sugar, cornstarch and salt. Gradually stir in milk until smooth.
- Cook over medium heat, stirring constantly until mixture thickens and boils. Boil for 1 minute.
- Remove from heat and gradually stir about one fourth of the hot mixture into beaten eggs.
- Return egg mixture to remaining hot mixture in saucepan. Cook over low heat 2 minutes, stirring constantly.
- Remove from heat and stir in butter, vanilla and bananas.
- Pour into serving dishes.
- Serve warm or chilled.
