Banana Pancakes
Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 3/4 cup milk
  • 2 tablespoons butter, melted
  • 2 ripe bananas, mashed

Steps
  1. In a large bowl, mix together the flour, sugar, baking powder and salt.
  2. In a separate bowl, whisk together the egg, milk and melted butter.
  3. Stir the egg mixture into the dry ingredients until just blended.
  4. Stir in the mashed bananas.
  5. Heat a lightly oiled griddle or frying pan over medium high heat.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
