- 1/2 cup butter
- 3/4 cup brown sugar
- 1 egg
- 1 large banana, mashed
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 1/2 cups rolled oats
- Preheat oven to 350°F (175°C). Grease cookie sheet.
- Cream butter and brown sugar together in a bowl. Beat in egg, banana, and vanilla.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Stir into butter mixture.
- Stir in oats until well combined.
- Drop dough by rounded spoonfuls onto prepared cookie sheet. Bake for 12 to 15 minutes or until lightly golden.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
