- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons butter, melted and cooled
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 cup mashed ripe bananas (about 2 medium)
- 1/4 cup plain yogurt or sour cream
- 1 teaspoon vanilla extract
- Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- In a separate bowl, whisk together the melted butter and sugar until combined. Whisk in the eggs, mashed banana, yogurt and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
