Banana Muffins
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons butter, melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/4 cup plain yogurt or sour cream
  • 1 teaspoon vanilla extract

Steps
  1. Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together the melted butter and sugar until combined. Whisk in the eggs, mashed banana, yogurt and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
