Banana Bread Muff…
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 1/3 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup mashed ripe bananas (about 2-3)

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, combine flour, baking soda, baking powder and salt. In a separate bowl, cream together the sugar and oil. Stir in eggs and mashed bananas until well blended.
  3. Add banana mixture to flour mixture; stir just to moisten. Spoon batter into prepared muffin cups.
  4. Bake in preheated oven for 18 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
