1/2 cup peanut butter
1/2 cup honey
1/4 cup coconut oil, melted
3 ripe bananas, mashed
2 teaspoons vanilla extract
2 cups rolled oats (not quick-cooking)
1 teaspoon baking soda
1/4 teaspoon salt

Steps
Preheat oven to 350°F and line an 8x8-inch baking dish with parchment paper.
In a medium bowl, mix together peanut butter, honey, coconut oil, mashed bananas and vanilla extract until combined.
In a separate bowl, mix together oats, baking soda and salt. Add the wet ingredients to the dry ingredients and stir until combined.
Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press down evenly.
Bake for 25 minutes or until golden brown. Let cool completely before cutting into bars.
