Ingredients
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 3 ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats (not quick-cooking)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Steps
  1. Preheat oven to 350°F and line an 8x8-inch baking dish with parchment paper.
  2. In a medium bowl, mix together peanut butter, honey, coconut oil, mashed bananas and vanilla extract until combined.
  3. In a separate bowl, mix together oats, baking soda and salt. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press down evenly.
  5. Bake for 25 minutes or until golden brown. Let cool completely before cutting into bars.
  6. Enjoy!
