- 1-2 zucchini
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1 egg, beaten
- Preheat oven to 425°F.
- Cut the zucchini into fry shapes.
- In a shallow bowl, mix together the flour, garlic powder, oregano and salt.
- Dip each zucchini fry in the beaten egg, then coat in the flour mixture.
- Place on a greased baking sheet and bake for 15 minutes or until golden brown.
- Serve warm.
