- 4 large baking potatoes
- 1/4 cup melted butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon smoked paprika
- 2 cups cheddar cheese, shredded
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Scrub the potatoes clean and pat dry. Pierce the potatoes with a fork several times on each side.
- Brush the potatoes with melted butter and sprinkle with garlic powder, onion powder, black pepper, and smoked paprika.
- Bake for 45 minutes or until potatoes are soft when squeezed gently.
- Remove from oven and let cool slightly. Cut each potato in half lengthwise.
- Scoop out the inside of the potato leaving about 1/8 inch of potato flesh in the skin.
- Place potato skins onto prepared baking sheet, skin side up. Fill each potato skin with 1/4 cup of cheddar cheese.
- Bake for an additional 15 minutes or until cheese is melted and bubbly.
